I’ve made plenty of turkey & chicken stock, usually cooking for no more than 2 - 3 hours tops. The end product is always gelatinous. Sounds like bone broth to me.

I made turkey stock over the holidays which I simmered down into a more dense gelatinous form. I then put it into sandwich bags 1 cup at a time in the freezer. I take them out whenever I need stock. Wouldn’t this be considered bone broth?
