Yes of course. Though this vehicle is slow, no cop car where I live (Canada) will be able to stop it even if they surround it (the James May approach in the hot hatch police chase). Simply have a plan to evade the cops with a diversion at a set destination and you're golden.
There's an entire bed to put a giant fuel cell, then you have enough to go until the cops run out of fuel.
