@balls187: If you keep the bottom open and the top practically closed the heat should stay low enough where you don't need to screw around with the water. Normally I would smoke the ribs for a few hours then finish them in the oven wrapped up in tinfoil if I don't have enough time. Water is used to control the temp,

@jmb1983: If you get a delmonico cut rib eye it is yes. That is not "default".

@mfusion: Well said... If you are out to dinner and your mashed potatoes show up RED you know you're about to have a great steak.

@zmnatz: It's great, but all the work that goes into owning a 70's stink boat makes it a wash (well not really).

@Bocachica: I agree, I would just say that if you like your meat well done (ick) forget about these cuts because when you go past medium rare they turn into shoe leather.

@James Kin: They have it a Pubix, but more often then not you have to ask them for it.

@zmnatz: For our boat we have a small propane grill. If you're in the market for a small one check the boat supply places.

@jarhead: Fillet doesn't have enough fat which means it lacks the flavor you find in a rib eye or delmonico.

If I'm grilling moo Ribeye is where it's at, PERIOD. It is hands down the most flavorful cut on the cow.

I don't understand why people want to work in this industry. The hours are horrible and stress is high, it's just like Information Tech... wait a minute... :(
