Each familiar has to reach a certain level before it can evolve. When it evolves it will go back to level 1 and retain some of the stats it had from before. I felt bad so I looked it up for you =) It's the Monolith, which learns the taunt skill "Yoo Hoo" after it evolves into the 2nd stage Megalith and reaches level 6. Once I got one of these it rarely left my party.
Once you get one of those tombstone-with-feet familiars and get them to learn their taunt ability, things will be much more manageable.
