Start with the original (Episode IV), and then follow that up with The Empire Strikes Back. After that, skip Episode I (the first prequel), and watch Episodes…

I think the new movies should at least acknowledge what happened in the prequels, via reference to the Clone Wars, any of the prequel planets (Naboo, Coruscant, Kamino, Mustafar) to make them feel more a part of the universe. And then never mention them again.
