@cate3710: In modern society it is very easy to keep kosher because kosher food is in abundance. Also, if one is very observant, one usually lives in a community with others who are equally observant so the rules are simply a way of life - they are not seen as restrictions.

As a former Jewish teen who grew up in a town ~80% Jewish, I can say that eating disorders were rampant. But I am of the belief that they are not something one chooses, rather there are certain triggers, which cause one to exhibit the disordered behavior written in one's genes.
