Was the Mustang you drove a performance package? If not, that would explain the sluggishness. The gearing on the standard car is more for economy, but the PP's 3.55s make it much snappier. I had a performance package EB with a friend that had a standard one, both manuals. You can really feel the difference.

M62s have a lot of problems with timing chain guides and various gaskets in the top end leaking oil. Also the valve stem guides leak later in life, leading to higher oil consumption. Just because you haven’t had any problems with your car, does not mean that the motor is not problematic.
