I noticed you mention Fullmetal Alchemist. Have you seen Fullmetal Alchemist: Brotherhood? The first anime diverged from it's source manga fairly early on, while Brotherhood more or less follows the manga very well. I personally find I like Brotherhood better, but both are good.
