Ace Combat Zero had the “documentary” style story you were referring to, which changes based on whether or not you spared enemy pilots in crippled planes or you killed them.

Campy plots? Cringe-worthy dialogue? Planes with lasers? Ridiculous giant enemy gunships?

I highly recommend you go back and play Ace Combat 4, 5, and Zero, which many fans regard as the best games in the series.
