Honestly I think the gluten-free thing is dying out. All the fad diet people are “doing keto” now. People with legit wheat allergies or celiac disease still avoid wheat gluten, of course, but the trend of avoiding gluten because it’s “inflammatory” seems to be on the decline.

As a patron, I absolutely hate it when the restaurant is empty and they seat me right next to the only other table.
