Because the ps4 titles shown at E3 were running on ps4 dev kits while Microsoft's demos ran on PCs with a far better GPU than the one that's shipping with the console.

It's September, game isn't coming out until February. They are still running the game in a dev environment on the dev kits.

The reason is called "creative freedom" and "making the game he wants to make". Instead of bending ass over backwards for everyone who doesn't want that kind of game. Don't like it? Don't play it. No reason to shame a creator for making something you don't like, just move on :S
