I was not able to afford a real ceramic Big Green Egg, so I bought the much cheaper (and lighter) metal egg called the Akorn Kamado. I find I can really control the temp well and it will keep going on a single chimney of coals for close to 8 hours.
I take umbrage at the comment that sous vide folks are more pedantic. Now let me start by pointing out that sous vide is French for under vacu. . . . Wait. I resemble that remark!

Just did this yesterday while making bolognese and on the recommendation of seriouseats.com. Have to say is was therapeutically satisfying.
I think the key thing is not the fees but the exchange rate, which is where these services make their real money. It would be interesting to see the exchange rates they offered at any one point in time to figure out how much they are skimming.

1. Sagrada Famiglia - needs no introduction, but you have to pre-buy tickets from the confusing website. Make sure that you get the option to go up one of the steeples as the views are incredible.
The Rochester Curling Club is a great facility. Also a huge fan of Dinosaur BBQ. Go for brunch and reminisce with a pitcher of Genessee Cream Ale (a visit to the brewery is also worth the short drive).
I have a Brita that we leave on the counter. After a little while, there is a visible green film of what I assume is algae on the bottom and we have to take it apart and clean it. Not sure how that jives with this article as it is filtered water in a closed jug.
Would love to see leg of lamb done. I tried it for the first time on Easter at a vacation house with 10 friends and it was disastrous. I think the issue was getting heat to evenly permeate the deboned roast. Since it had been cut, it did not seem to cook evenly.
Cool idea, but didn't work out as well as I expected. The egg doesn't fit well in the avocado (even after scooping out a little more), and the top of the avocado burnt a little and formed a weird tasting skin with an unchewable texture.
