I really wish Gamefreak would hold a contest for putting a fan designed 'mon in the game, similar to how many Mega Man X series bosses were fan designed.

Not really no. Most competitive smash players don't have anything against items, it's just that they don't want them in a competition environment. Though Fox is very popular, you tend to see the six or so top characters. There's plenty of tournament allowed stages that aren't Final Destination.
