Great as always Albert. I have always loved flank steak, the flavor of a properly marinated and cooked steak is out of this world. That being said, I was recently "rewarded" with a sous-vide cooker having backed it on KickStarter. Now I have to admit I get kick-ass steaks out of this system. 140 degrees for medium 130

Excellent article Melanie! I've added this to my Cooking - Menus - Food bookmark for continuous reference. Mise en place is critical for a well prepared meal. I love the prep stage. I have special bowls I use and hearing them "glass-on-glass" as I use the ingredients and stack the empty bowls is my favorite part. I
