Neutral still burns gas that you don't burn in gear. So you are not saving gas by "popping it in neutral", as if that was something that was harder to do with an automatic than a stick.

FWIW most transmission tunes can lock that out so it won't automatically shift at redline.
If you had a lot of power, you'd probably be faster just sticking it in 3rd and tooling around. If you've got torque, it doesn't make a damn difference, and you'll probably drive a lot smoother -> faster.
