Bad carnitas is the worst! I love living in SoCal. The best carnitas I have ever had comes from the grocery store down the street and they have $1 tacos on the weekends.

The most crucial step with carnitas is searing/broiling it after its been shredded. And you have to use lard during that step to get the best results. 

That is usually because they simmer it in too much water for too long and then dont finish it off under the broiler. A real traditional place will simmer it in lard and broil the shredded bits with a further lard drizzle.

If you are making carnitas and you are searing/broiling it with anything other than lard, you aren’t making carnitas.
