I would point out that this doesn't include private institutions. I imagine they would shift the averages around since tuition is so different and generally private schools give out more in financial aid to the general student populations.

You're correct, but it is still a reference to a Catholic people, which is largely who attends/maintains/makes up the school. It is a self-reference even if it doesn't represent every Irish-American. The same is true for the Vikings. This is not true for almost every use of American Indian symbolism.
