Posted this in a response to another comment but it so good I had to share. Mix soy sauce, garlic, ginger, sambal oelek, and miso. Glaze the chicken thighs with them and then scream you food orgasms to the god of your choice.

I wouldn't brine the thighs. They are pretty flavorful on their own so just add the seasoning directly to the thighs. Or do what I do and coat them in a soy/miso glaze. Very tasty and easy. Just mix soy sauce, ginger, garlic, sambal oelek, and miso paste together and then brush on the skewered chicken thighs.

Bah won't let me edit. Should say not "really" glutinous. In a pinch it can be used but very much not recommended. Hence minor correction.

Minor correction. Arborio (or really any risotto rice) is not glutinous. Glutinous rices are sticky and clump something arborio defiantly does not do.
