You could substitute butter (softened of course) for the mayo. It's just fat to make it smooth. Heck any fat would work.
Ok then do this. Pulse the veggies (saves on knife work and still leaves them chunky), Then pulse the cheese and fat. And then fold the two together. Also if you have a gas stove you can roast the peppers over the flame and shave some time and get even smokier roasted peppers.
If you toss it all in as chunks (cheese, veggies, etc) it actually comes out pretty smooth and blended.
You could probably chuck it all in a food processor and blend for 2 minutes to get an even more hummus like texture. Might need to adjust the amount of mayo and cube the cheese instead of shredding it, but I think it would turn out quite awesome.
