In the US, eggs are washed, which scours off a protective membrane. In the UK, they're not, and they keep at room temp better because bacteria can't get in.

Are you using the right grain of sushi-grade rice, and then cooking according to the sticky rice recipe? It's a little different from the normal rinse and boil.
OP may have been; I haven't done enough comparison to say because even "bad" spices tend to be pretty useful. Flavor intensifies as dehydration occurs.
They're usually way cheaper. I can get a pound of spices online for about the same price as a couple ounces at the grocery.
If so, it will be full of connective tissue and collagen, and taste stringy and tough unless it's braised or roasted for a long period of time.
