I didn't particularly like Joe's Goals (didn't work well for organizing my kinds of goals), but the logbook sounds interesting. I'll have to check it out — maybe I'll start using it again.

That's true, leo, but the thing about setting unachievable goals is that you first need to accept the fact that they're unachievable. The aim isn't to actually accomplish the goal, but rather to get as close as you can. Yes, this method basically sets you up for "failure" — but only in order to push yourself further.…
I think everyone should have a list of achievable goals and unachievable goals. If you really want to do something, try to do it!
