It doesn’t cost much to run, but you also don’t run it constantly. You use it to suck cool air in from outside in the morning and evening for an hour or so, and (which some people forget) flush the hot air out of your attic after a scorching hot day. The latter is a big part of what makes them so useful.

I believe that is a big part of the reason behind fermentation. As I understand it, the fermentation process creates its own acid (for example, homemade pickles, kimchi, sauerkraut, etc. are fermented without added vinegar).
