They don't. Tournament players have never insisted on Final Destination, only on neutral stages that don't actively attack players. Final Destination is popular more because it's large than because it's flat and honestly I think Animal Crossing got more play in SSB3.
Technically you can rip your roms from your own cartridges. Almost no one does because it requires that you buy equipment, but that's an option.
