Also, I wonder how long a duration they left the exposure for so they could get this cool shot.

I fish out of a Hobie almost every weekend, and you are correct. While they are faster than other sit-on-tops, Hobies are still outclassed when it comes to distance kayaking. The 16ft Adventure (rebranded this year as Revolution 16) is the closest you can get to a touring kayak with pedals.
