In Souls everyone ostensibly shares the same world to a degree. The balance issues with online elements would be absurd with people using different options but entering each other’s worlds as well. Do you get around this by fragmenting the community into their own optionally-selected gardens? Force those not playing

Strongest argument I have against difficulty options in Dark Souls is online play balance and possible fragmentation of the community as a result. How to balance cooperative and invasion elements with multiple players with different difficulties? That would be a significant challenge to make work correctly.
