It was made ahead of time, proofed in trays overnight, and stored in a cooler until needed. We had a "dough guy" who did 3 12 hour shifts a week, his entire job was dough and sauce.
That's crazy. I worked a pizza place for a while (not Pizza Hut) and when we did pan doughs, the dough ball was lightly brushed with olive oil and hand-docked into the bottom of the pan. That was all it took. I bet <1tsp of oil was more than enough to coat the dough and it never stuck.
