I couldn't edit my response below for some reason, but - I read down thread about the difference between sensitivity to milk sugar (i.e. lactose) and milk proteins. Maybe the people with gluten issues have issues with the milk protein, and not lactose? Food for thought (bad pun intended).
What does being white have to do with it? I'm as pasty white as it gets and I'm lactose intolerant. I also know I'm not alone in that.
That's very interesting. None of the people I know with celiac have an issue with lactose (I became lactose intolerant in my late 20's and so, we discuss our sad food issues). At least I can take lactaid and get by, though it doesn't fix everything.
