Why the hell would you spend $100 more for the console with the camera, and not use it?

Well, if we swing this argument back towards the focus of e3 / console wars, you could argue that anyone who "can just unplug the camera", should just buy a PS4, since they wouldn't be utilising the peripheral that bumps the X1 price up by 100 bucks, in an otherwise almost architecturally identical console.

That optical out on the PS4 looks like it'd do the trick.

Someone with, say, an i5-2500k might look at this as a (justifiably) nice boost up to stay competitive through next-gen titles.

Your saving wayyyyy more than a "few bucks" in the longrun. Even a $1000 gaming PC makes up the difference in price from a console within a year, assuming your seriousness of the gaming hobby involves purchasing 15 or more games a year.
