I thought this song was hilarious when I first heard it in game. Over time it got annoying and I hated it (the chocobos are much faster than running, so I heard this and the other chocobo themes a lot), but listening to it now it isn't so bad.

Well, they could have used Crisis Core to pull the models (I don't remember how similar the places were though). I'm pretty sure they could not get the models out of a video or pre rendered background unless they had some super advanced tech.

I'm pretty sure they didn't import any models for midgar, FF7 was pre-rendered for the most part (pretty much everything but the map characters, battle models, and the world map models).
