You are right. Google employs cloud based tokenization where your tokens are stored on Googles servers. Apple's tokens reside on the device.
Exactly. A bank can block the token rather than the card number when sites/stores get hacked and simply issue a new token associated with the original card number.

you failed to mention that, in addition to the retailers listed above, ApplePay works with existing NFC terminals that aren't branded as ApplePay compatible terminals (I.e.- GoogleWallet branded terminals). This makes availability that much greater.

I went to a local grocery store chain and tried to use my iPhone with a Google wallet branded terminal and it worked just fine. The chain is not listed as an Applepay participant.
