Yeah, phalaxes of any kind are hard to maneuver but, as you point out, you can organize the rest of your army to take advantage of that. Basically use them as mostly immobile, but slowly advancing, walls of death and then flank the enemy and push them into the phalaxes. Which is what the Swiss and the Macedonians did.
