I can't answer your question directly but I can provide a tip - check an Asian market. These somewhat more "niche" items are much, much cheaper at Asian markets due to supply/demand/turnover. For an example, bok choy at my typical "American" grocery is something like 4.99/lb while at the Asian market it's only 1.99/lb.

Love dried mushrooms. Never made a broth from the soaking liquid, will have to try that. Word of warning though, sometimes the dried mushrooms I get are not cleaned, so in order to make a broth, you'd want to clean them very well (need to scrub) then get fresh water for the broth.
Do chicken wings and legs make you barf? Or heck, just a breast with skin intact? Why is it acceptable to eat those things, but not eat the skin by itself?

Depends...if you add a lot then yeah. I use the corn/carrot/pea mix commonly found, if you don't add too much then they get heated through without cooling the broth too much. I don't like super hot food anyways though so I let it cool down a lot anyways.

I have had one of these for a couple years now and I love it, especially the plastic-less ID slot and the thick, thick leather and stitching. Really high-quality and durable, mine has gone through the washer twice and you wouldn't know.
