Tofu is not fermented, if by that you mean ‘incubated with a culture of microbes’. Tofu is soymilk that has been coagulated by the addition of salts such as calcium sulphate, magnesium sulfate, or calcium chloride.
There’s a continent full of people who have been eating a lot of soy products for generations. Has anyone looked at their health to see if there are signs of ill effects?
