It's not spherification. According to http://www.channelnewsasia.com/tv/tvshows/jap… it's made with agar, a common analog to gelatin in asian cuisine. Agar has the benefit of creating more brittle gels with a higher melting point. My guess is that the agar is a fairly low percentage (around .5% or less by weight)…
