Actually, putting down reptiles like that is one of the cruelest ways to put them down. Their blood crystallizes and they feel it stabbing from inside of them as their bodily processes grind to a halt. They suffocate and basically have stroke at the same time.

You can't transfer from Gen II to Gen III though.

That's impossible, I'm afraid. Espeon was introduced Gen II. The file storage system for Pokémon was completely overhauled and changed from Gen II to Gen III, so its damn near impossible to retreive a Gen II pokémon and bring it to modern Gen. However, there is a work around somewhere, but its hard as hell.

Well this will keep me busy until Pokémon X&Y are out, and until GTAV is available for PC.
