Virtually all airlines (other than the super cut rate airlines) have different classes of seats you can pay a little more for legroom. For example Delta has “Economy Comfort” that gives you 3 inches more leg room and a tiny bit more recline. And it is usually less than $100 to upgrade.

I make a point of matching my sleep to the destination I am heading. So if I am flying to somewhere where it is 12AM while it is 4PM when I departed, you bet your ass I am goign to recline and go to sleep and miss the meal service. It makes the jetlag way easier to overcome.
