So I’ve heard. But old habits are hard to break. I find cooking to be therapeutic and I rather enjoy tending the pan, watching the bacon cook, being more involved in the process. I suppose if I were cooking for a crowd I would try the oven method but I’m ok using the skillet most of the time.

I’ll do peanut butter and sliced banana on French Toast, topped with a good maple syrup. 

Any benefit to starting with a cold pan only applies to the first batch and I usually have several batches. I cut my bacon slices in half to make them more manageable and do the flip and shuffle but somewhat more frequently than suggested here. Yes, it is time consuming but we’re talkin’ bacon here. The comment about the headache concerns me. I am a devout ingredient-list-reader (Mrs. Z has a number of food sensitivities/allergies). Sounds to me like this mix either has a near-fatal level of sodium or enough MSG to trigger a reaction in you...(just looked it up..no MSG listed and one biscuit has 380 mg sodium)
