Like Whitson said, Rooting will void your warranty. If you ever needed to take your phone in you would have to turn the phone back to S-on state and load your original rom. Seems like a pain but it really isnt, I've had to do this when my microphone went out and needed to get it replaced.

Cm7 is only availabe in alpha right now. It had some minor annoyances like no working battery percentage but there is a working rom. Just have to live a little to flash the alpha but I would say give it a shot lol Just make sure to Nandroid.

I was running a nightly from a builds back and this stable has wowed me. Battery life alone has seen a vast improvement at least on my end.
