If you can tell me the day specific day you became a mature adult, I can give you a specific answer.

I think (though its not right in front of me to check) that the mobile apps keep a cache of your passwords on the device, and just refresh them periodically.

I've really enjoyed Aviate. To be honest its not so much the changing home screen, its just the simplified layout I appreciate. I tend to get bogged down tweaking my home page. This just takes care of if for you. Kinda like a butler.

That kinda looks like a fried egg, rather than a poached egg. Delicious I'm sure, but not sure it counts as a replacement.

Is bluetooth voice calls from your iPod to phone possible?

Its awesome as an instant news device. I used to use it before setting off to or from work on my bike in London to check any incidents on my route. People would tweet about rainstorms that were heading my way, or crashes at major junctions i could avoid. No news service can be so instant, or so localised.
