I'm a fan of using grated cauliflower in place of rice (food processor grater plate FTW), but I think that qualifies as a different preparation entirely.

If you want to get lazy on the mashing process and just serve the cauliflower with a much grainier texture, it also makes a pretty damn tasty substitute for rice. It works best with sweeter foods like teriyaki, but is good enough with most things.
