Different strokes for different people. Some people want hyper-realism (maybe to push their computers). Others may want to go for a cartoony art style like Sunset Overdrive or Zelda.
People want to escape into a world/situations that they can not in the real world. Realism provides the person an opportunity to take part in outrageous situations in a realistic believable setting.
Who says games are just escapism, and what does realistic visuals have to do with an inability to 'escape' so to speak? When last I checked, not everyone was a pulp adventure protag going on action packed, world spanning adventures.
