Also it looks like it might be like XY where we don’t get many new Pokemon but they make up for it with the Alola forms (in XY they made up for it with Mega’s)

As I understand it, old Pokemon have adapted to the conditions of the Alola region (or in the case of Exeggutor Alola is apparently it’s original form), it’s like in Black/white where there was deer Pokemon with different forms based on which season you caught it in.

My assumption is that at some point someone noticed the game glitches if you get hit as you enter a pipe. As for the exactness, I’d say it’s that tool assisted (aka they had a computer analyse the games code as it was running to see what affects the pipes destination).

It’s possible, but that glitch at the end requires a bunch of things to be exactly right for it to work. From the wiki:
