I’ll agree that it’s not “needed”, but I would say it does speak to how underpowered the Switch is. Some of Nintendo’s own games chug and look less than stellar on the Switch, especially in handheld mode.

Probably mostly on Netflix’s end. They get data on what type of device is being used every time someone streams something and they probably saw that there was hardly anyone using the Nintendo apps so they decided “why bother to spend money updating this if hardly anyone uses it?”

I always figured it was originally made as a model, but then they rendered one frame and used that image for the screen. I didn't think it was a model actually being rendered in real time. 

But the answer to that is easy. It's called "the writer knew they needed to say what was in the chest and this was a slightly more interesting way to lead into that".
