We actually do have a vegetarian and two GF denizens in our annual get-togethers of 20ish people. Even a few that cannot have various seeds or nuts. Everything is usually very good and everyone waddles away impressed at the spread.

Yeah, do the recipe and then modify after it cools. I think maybe you should just take charge unless you enjoy slicing your gravy. I had to do the same thing for getting good stuffing.
