This is yet another example of information overabundance. You can collect all of this information, but what you should be asking is "does it do anything to improve my life?"
Anyone that thinks the app isn't tracking and using your data, needs to think again. And that might be frightening or not a big deal, as long as you know. These apps exist to harvest info, not to aid users, so much. Much like MyFitnessPal, the data flowing to the backend is where the value is.
