This is the one I use in the GIF, A Raspini. It is good, sturdy, sharp and adjustable. Another good option is a Japanese mandolin that are usually available at Asian supermarkets. Those are relatively cheap and plastic but still do a very good job.
I were to go for a protection glove, I think I'd have to go for a kick ass chainmail oyster glove. Those just look so cool.
