I’ve done both, and the sodium citrate is superior in most cases. you can pack in far more cheese than a roux can emulsify. That being said, I still use the classic roux method for cheese soups.

Everyone panics every time carriers try to do anything remotely inventive with data. The argument goes something like this: “Carrier A is doing X. I know that X sounds great, but it’s really not. To understand why X is bad, let’s look at Net Neutrality, which says that ‘all data is equal.’ Since X doesn’t treat all

Dammit! I corrected the spelling then put in the old slide. Anyways, yes we didn’t include electrical because it’s not a skill used as frequently as car maintenance and clogged drains. I’m comfortable changing outlets, light fixtures and ceiling fans. I wouldn’t recommend DIYing anything at the panel...

In addition to what others are saying, you can have LastPass ask for your password again for certain sites (not sure about 2FA in this case). For example, I need to enter my password any time I go to my bank, but not for less important sites.

Lastpass manages access to your vault and its contents. The multi-factor options apply to the vault, not each site’s authentication scheme. You can designate trusted devices, such as home computer and phone, so that it doesn’t always require the second factor when you login to the vault. You can add more security

You need to 2FA to to log into Lastpass. Once you’re logged in you don’t need to 2FA Lastpass again until you restart your browser (assuming you don’t have the extension remember your Lastpass password)

You can do the 2-factor for lastpass w/o setting it for all sites; it’s actually pretty convenient so you can require additional security on some sites (your banks, ertc) and less on others.

The 2-factor is saved per device like other 2-factor systems. Once you log in to LastPass on a device or browser, it’s saved. If you’re clearing cookies/settings, then yes, you’ll have to use the challenge again just like other 2-factor systems.

Thermapen Classic (or really any of the Thermapens). Bar none the best thermometer for cooking I have ever bought — accept no substitutes.

I'm not much for white wine, either, so I keep a small stock of those little individual bottles or tetra packs of grocery store Chardonnay in the pantry when I need a cup of white wine for a recipe. It makes a lot more sense than opening a bottle of wine if you do t really intend to drink the rest with dinner.

Erm... making dovetails out of MDF? Is... is that a thing? Why is that a thing?

If it were me, I would have just nailed a couple of wood strips between the floor joists and be done. Obviously you would need a few different spacings, but it would eliminate loosing short pieces inside the tubing. Just seems cheaper and a better view of your materials in the end.

So many of the compliments that my cooking has received are actually owed to this man. Seems that every time I search for a better way to prepare anything, I end up reading one of his articles. I spent probably a good hour reading about how to boil an egg and was thoroughly entertained.

I do it hardcore Asian style, I just swirl the water with rice in the bowl and pour it out. No, I don’t lose any of the rice.

Excellent post. About 12 years ago, when I was still putting my first shop together, I did a lot of research into dust collection, and had a lot of communication with Bill Pentz. I eventually put in a ClearVue 5 HP cyclone of Bill Pentz design, with 6’ x 13” of .5 micron filters, and 6” ducting to all of my tools. At

I would disagree with you. I believe your definition of ‘minimalism’ really aligns more with what I consider to be ‘non-consumer’ or ‘low consumer’

I’ve said it before, I’ll say it again: “minimalism” is just another manifestation of materialism. The motivations are the same, the only difference is the message...materialists say “I’m better than you because I have more stuff”. Minimalists say “I’m better than you because I’m more humble”. I choose “none of the

I’m with you on your skepticism, and started a reply to you earlier today which became so long that I decided I was better off posting it where it won’t be relegated to a comment on a webpage somewhere. Have a read, and feel free to comment here or there.

The answer is yes, it’s absorbed in a meaningful way and can prevent a condition known as hyponatremia which is when you drink so much water you flush out electrolytes. Do that enough and it kills you. Electrolyte replacement, powders or capsules such as I use, can prevent that.
