wow those both sound so terrible. i would run away from this.

i can vouch for that oatmeal cookie recipe. as much as i love mark bittman, his recipe has nothing on the classic one. It just really does need all that butter.

yeah, a big problem with herbals is quality control - you might actually be overdosing and they could be too strong and you wouldn’t know it.

yeah, it seems a little silly to sous vide rice. it’s like trying it with paste. Like, just why? it’s something that cooks fast at high heat, with a cooking mechanism that is more about starch and hydration than it is about denaturing proteins.

fill the 5 gallon bucket “A”. fill the 3 gallon bucket “B” from it. empty B. dump the 2 remaining gallons from A into B. Fill A with 5 gallons. Fill B from A. A now has 4.

i suppose I could run the hose 300 feet out, then wrap it with heating tape so it doesn’t freeze when it’s -20 out... or I could dig a trench to 44" deep, run plumbing to a frost-proof hydrant and fix that when it inevitably freezes anyway.

I do it because the stuff at the beginning of extraction tastes better - its part of the reason espresso is brewed fast. Obviously, it is stronger. When I do this (steal the fresh stuff), I take only half a cup and dilute it with hot water - like an Americano. It’s good to see my taste confirmed, because it looks like

What about the oils, which can be a solvent for grimy things?
