I’m late on this, and I don’t have any photos of the gumbo itself. But these are the dumpling/handpies I made out of it. They need work, but I’m generally happy with the result.

Have you not heard of a date shake? They have been the standard in cabazon (and other terrible places in the imperial valley/other dry parts of California). Literally dates, milk, and ice cream (and a banana if you want). I would imagine it works for a smoothie, even more if you froze the banana.
