Pickling is very, very fine. It’s made to dissolve quickly in brines.

I keep fine kosher for rubs and marinades. Table for baking and just sprinkling here and there. I feel like it gets distributed a bit better when it’s finer.

The conversion rate does vary though, but that’s why I keep a few different kinds!

They recently opened a few in MA, but they’re not anywhere near me. Might be worth the trip if I could buy dry mustard by the pound, I go through so much somehow.

I just picked up the 2016 edition, and it might be the last one I buy. The 2 issues of Cook’s Country released since Chris Kimball’s departure have been.. rough. I was a bit perturbed that he was edited out of the images on the site THE DAY he left.

So the GOOD thing about salt is that it’s primary use is to dehydrate what it’s put into, which means the flavor of the (item) stands out more.

The BAD thing is that there can be too much salt. Textures of solids, viscosity of liquids.. everything changes! In baking this is LITERAL DEATH. Cookies won’t cook, fluffies
